My Little Fashion Queen





The other day Roxie decided to pick out her clothes. She pulled out a denim top that her cousin Claire gave to her and her black stretch pants and than went into my closet and found her one of her dad's black hats and that is what she wore all day long and very proudly.
Its a good thing I went though this with Martin so I am enjoying her self expression. The only day she doesn't get a choice on what she wears is Sunday otherwise she would wear the same pink dress every Sunday. (Grandma Bremners Disney Pink Dress)

It's Going To Be A Long Day!!


Today was Martin and Roxie's Doctors appointment.

Martin Stats:
Weight:35 lbs
Height: 40 1/2 inches.
So he is in his 50% which is what we expected.
The doctor said he is developing just find and the cough is because of the post nasal drip and it should clear up in a few days. Martin showed how high he could jump and he hopped on one leg and after the doctor said "good job" Roxie came up to Martin and gave him a hug and said "Good Job."
Martin got 5 shots today and cried the whole way home BUT the positive is he will not need anymore boosters shots until he is 11 years old.

Roxie Stats:
Weight: 22lbs 6oz
Height: 32 3/4 inches
Head Size: 18 3\4 inches
So she is in the 10-20% group for weight and 50-70% in height.
The second Dr Winterland walked into the room Roxie just started talking about everything and point at everything. Roxie did a really good job and didn't cry once until Martin started to get his shots and than it was a choir of "No Shots" and tears. Poor Roxie got 6 shots but again the good new is she will not need anymore shots until she is 4 years old.
When it comes to potty training Roxie loves sitting on the potty when I do and point out when she poops or when she is wet but I'm not ready for the power struggle and I will let her guide me when she is ready.
My thoughts are every because on top of Doctor shot day I didn't get much sleep last because I have the same cold as everyone else and the bathroom was calling.

First Week of Preschool

Today ends Martin's first week in preschool and boy he has loved every second of it.
I was really worried about preschool drop off because whenever I take him to primary he always wants me to go inside and sit down with him and there is always ALWAYS a big scene. The first day of preschool was just orientation for the Moms and the kids were in a different room reading books. So I was still near by but he was so excited about going back the next day and playing with kids and toys. So Tuesday morning I pulled up to the preschool and one of the teachers came out to the car and picked him up and brought him inside and never once did he cry, fuss or even ask for me. I was so very proud of him and I even got a little teary eye.
He came home very excited for Wednesday and couldn't go wait back to preschool. Today was the same as yesterday I dropped him off and he was so excited and couldn't get out of the car fast enough. I am so very proud of him that he is so willing to try something new. I know he is having a little trouble with not wanting to get wet when they have outside time and he really hated the thought of putting paint on his hands because he wanted to paint with a paint brush but other than that he is doing great. Next week they start learning Colors, Number, and a little Spanish.
After talking with some of the other mom at the preschool I found out I need to get Roxie on the list of 2013 because some of the moms have their kids on the list before they were even born. (NOT KIDDING) I called and Roxie is on the waiting list for 2013 but she said she can put her on the official list for 2015. I used to laugh when someone would ask me what preschool Martin was signed up for when he was a year old but now I get it.
Rita Lyons only teaches 25 students a year and she is great. She has been teaching for over 30 years and she has loved each and every year. I love her teaching style and how she refers to all the children as angels because I'm pretty sure sometimes the kids are not always angels.
(I have been so sick this week I didn't take a picture of Martin's first day of Preschool. So next week I hope to get some pictures of him with his Angel Bag they give the kids to bring home with them that has homework.)

MY DREAM CAR!! ONE CAN DREAM!!


Doug was in Las Vegas during our anniversary and we decided the following weekend to celebrate. Which happened to be the best idea since all 4 of us gave each other long lasting colds. (YUCK) Doug came home early from work and surprised me with an over night to the Fairmont Princess in Scottsdale. I was so excited because I had head so many wonderful and amazing things about the Princess and I have always wanted to stay there. When we arrived they upgraded us to a suite which was AMAZING! It was the size of our first apartment. There was a king size bed I wanted to bring home because it was so comfortable, view of the pool and PGA golf course and a HUGE bathroom with the perfect bath tube. It was so beautiful and quite no kids screaming, demanding, or picking on each other. OH did I forget to mention we were able to keep the A\C at about 69 degrees which is PREFECT when pregnant.
Than we went to dinner at Ruth Chris Steak house and like always it was wonderful and the most amazing steaks next to my father-in-laws yummy steaks. (Thanks to Wayne for the gift card.)We were able to watch a beautiful storm come into the area with lots and lots of lightening and tons of rain. In one night we received more rain than we normally do all summer.
The only downer was I ended up have contractions all night long so I didn't get much sleep. The next morning Doug took me over to the Porsche dealership and we were going to try and test drive one but I gave away that we won't be buying on. My dream Porsche was sitting there on the lot 1996 911. Expect for being black it was my dream car sitting right there in front of me for only 45,000. AH it feels good to dream. We went inside the dealership and they had a red Ferrari. Which I couldn't help but take pictures of Doug sitting in it.
We would have loved to extended our stay one more night but Martin had his first day of Preschool and I would have felt guilty sending someone else.
I have the best husband who is always keeping me on my toes and make me feel to beautiful and insanely special.

August 15th 2003 for some might have been a VERY hot humid day but for me it was a special day because I married my best friend and eternal companion in the Navuoo Temple. Since than we have traveled to many wonderful and exciting place, have two amazing and crazy kids and expecting another little girl at the end of October, bought our first home and moved into a bigger car. With all the crazy things that have happened Doug and I are still just as happy as the day we were married.
(A little healthier too.)
I'm so blessed to have married a man who is willing to accept everything about me, the good, the crazy, the loud, the tears, and all the rest in between. I couldn't imagine my life without Douglas B. Wimmer there by my side from now until eternity. Happy 7th Wedding Anniversary My best friend.

Chocolate Peanut Butter Cup Cupcakes


As requested: I sometimes make my chocolate cupcake batter from scratch but when it comes to giving them away to our Sunday school class it comes straight from Betty Crocker.
Items needed
1 box of Dark Chocolate (Chocolate) Cake Mix
3 Eggs
1 Cup of Milk
1 bag of Chocolate Reese Peanut Butter Cups (Save some for topping and freeze them.)

Directions
Mix together cake mix, eggs and Milk.
Pour batter into paper lining making it 3\4 full and add the peanut butter cup. It will slowly sink. Or fill 1\2 full add peanut butter cup and cover with batter until 3\4 full.
Bake at 350 F for 15-18 mins. So far they have been done at around 16 mins. The best way to make sure they are done is to push lightly in the center and when it bounces back its done. Remove from oven and make sure they are completely cooled before frosting!!

THE BEST PART!!
Peanut Butter Frosting with shaved Peanut Butter cups.
1 Cup of peanut butter (Smooth or Chunky.) I prefer the Smooth.
1\2 cup Butter at room temperature
2 cups powder sugar
3-4 Tablespoon of milk (2% milk)
1 teaspoon of Vanilla Extract (Unless using Mexican vanilla than use 1\2 teaspoon.)
Leftover peanut butter cups(Freeze them it makes it easy to grate later.)

Directions
Combine peanut butter and butter into large bowl and mix together until light and fluffy. Stop mixer and scrap the sides down before adding sugar.
Add sugar, 3 Tablespoon of milk and Vanilla. Slowly start to mix together and increase speed until creamy and smooth. add 1 Tablespoon of Milk if it is to thick.

Frost the cupcakes and add the grated peanut butter cups on top. You can also cut the peanut butter cups in 1\2 and place them on top or use peanut butter chips.

Other options if to use a small circle cutter and cut a hole after the cupcakes are cooled and place the peanut butter cup in the center of cupcake and cover with frosting after cooled. There are so many different ways to make them YUMMY!!

Cupcakes


So after Martin and his non-stop bugging me to make him "THE BEST CHOCOLATE CUPCAKES EVER"
I finally decided to take on the challenge of making Butter Cream frosting. (SO EASY) Last week I make German Chocolate Cupcakes with Mint Butter Cream Frosting. I decided I didn't want them in the house because I would eat them all and well to be honest I may be preggers but I do not need to eat two or three cupcakes. So I took them to Doug's work and to one of the ladies I visiting teach. I was given some wonderful feed back. I personally would love to say they were the best cupcakes but for some reason this pregnancy has been messing with my taste buds. (SO NOT FAIR)
Next challenge for cupcakes and Martin "Best Chocolate Cupcakes EVER." I'm going to tackle S'mores Cupcakes YUMMY!!!!

My personally favorite cupcake has been the dark chocolate peanut butter with peanut butter frosting!!
I never thought I would say his about cooking or even baking but I really love making cupcakes for fun.
